Garlic Butter Mushrooms

Ingredients

  • 200g fresh mushrooms
  • 2 cloves garlic minced
  • 15g butter
  • 1 tbsp olive oil
  • Fresh parsley chopped
  • Salt and pepper to taste
  • Any seasoning of choice

Instructions

  1. Clean and slice the mushrooms
  2. Heat butter and olive oil in a large pan over medium heat
  3. Add garlic and sauté for 1 minute until fragrant
  4. Add mushrooms and cook for 8-10 minutes until golden
  5. Season with salt and pepper
  6. Garnish with fresh parsley and serve hot

Notes

For extra flavor, add a drizzle of mayo or your favorite hot sauce.

Oyster Mushroom Tacos

Delicious and savory oyster mushroom tacos with a smoky, umami-rich flavor. Perfect for a quick weeknight dinner.

Ingredients

  • 200g oyster mushrooms, torn into strips
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 4 small corn or flour tortillas
  • 1/2 cup shredded cabbage
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Tear the oyster mushrooms into thin strips that resemble pulled meat.
  2. Heat olive oil in a large pan over medium-high heat.
  3. Add the mushrooms to the pan and cook for 5-7 minutes until they start to brown and crisp up.
  4. Add smoked paprika, cumin, garlic powder, salt, and pepper. Stir well and cook for another 2-3 minutes.
  5. Warm the tortillas in a dry pan or directly over a gas flame for about 30 seconds on each side.
  6. Fill each tortilla with the seasoned mushrooms and top with shredded cabbage.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
  8. Squeeze lime juice over the tacos before eating and enjoy!

Notes

For extra flavor, add a drizzle of chipotle mayo or your favorite hot sauce. You can also add diced avocado or pickled onions for more toppings.
